OpenIDDSI Framework Levels
The IDDSI framework consists of 8 levels (0-7) describing food textures and liquid thickness. Levels 0-4 apply to drinks, while levels 3-7 apply to foods.
DDrink Levels (0-4)
Thin
Flows like water. No modification needed for typical thin beverages.
Slightly Thick
Thicker than water. Requires slightly more effort to drink than thin liquids.
Mildly Thick
Flows off a spoon quickly. Can be drunk from a cup with some effort.
Moderately Thick / Liquidised
Can be drunk from a cup. Will drip in dollops through fork tines. Smooth with no lumps for liquidised foods.
Extremely Thick / Pureed
Usually eaten with a spoon. Does not require chewing. Falls off spoon in a single spoonful when tilted.
FFood Levels (3-7)
Moderately Thick / Liquidised
Can be drunk from a cup. Will drip in dollops through fork tines. Smooth with no lumps for liquidised foods.
Extremely Thick / Pureed
Usually eaten with a spoon. Does not require chewing. Falls off spoon in a single spoonful when tilted.
Minced & Moist
Soft, moist pieces with no separate thin liquid. Pieces small enough that minimal chewing required.
Soft & Bite-Sized
Soft, tender, moist food cut into bite-sized pieces. Requires chewing before swallowing.
Regular / Easy to Chew
Normal everyday foods of soft-tender textures or regular textures depending on patient needs. Full range of textures.
